I need some suggestions for lunch. Stuff I can make on Sunday and then put into containers for the week.

I just make beans and grains, then add a fresh salad for lunch. Do you have a grocery store nearby with a salad bar?
To dress up the B&G, I like to add salsa. I eat very simply most of the time. I just got a book yesterday that outlines eating vegan and has 125 simple recipes. I'll be damned if I can remember the name of it, though.
BTW, I'm not fond of quinoa. reminds me of grits.

There is no salad bar near by. I like simple.
I used to hate quinoa. But I've grown to really love it. Here is a little quinoa dish I make:
Cook quinoa in vegetable broth. Sautee green beans in olive oil and garlic and salt. Put quinoa on plate, with sauteed green beans on top. You're done!

That sounds pretty good! I never even thought of cooking quinoa in a vegetable broth.
Over the weekend I made a batch of wild and brown rice, but added sauteed mushrooms to it. Very tasty, added peas to it.

What a great thread idea! For our vegan shepherd's pie you need Smart Ground (or any brand of vegan ground "beef"), corn (we used frozen corn), and potatoes (we used red potatoes because they're my favorite). First we made the mashed potatoes by boiling them and mushing them up. Then we took a deep-ish baking dish and lined the bottom with the Smart Ground (we seasoned it with herb salt), then a layer of corn, and then we spread the mashers over the top (we used a fork so it would have a neat pattern). Then we put it in the oven at 350 for about 15 minutes. It doesn't need long because the "meat" doesn't take long to cook. There isn't much science to the recipe, we just sort of made it up. Someone told me that you need peas in shepherd's pie for it to be official, but I'm not a big fan of peas, so we left them out. Feel free to add them to yours, though! You could also probably add some gravy or sauce for flavor. Typing this is making me hungry for shepherd's pie!! P.S. Sorry if you make this and hate it! I liked it, but I tend to like simple (Tim says bland) foods.

I have a great recipe for baked beans....I suppose it's vegan. Can't think of anything animal about it.
1 can of chili beans in sauce 1 chopped onion few squirts of ketchup, mustard, and a little maple syrup about 1/4 cup brown sugar, to taste a few dashes of: salt, pepper, crushed red pepper (my staple), chili powder, liquid smoke
Toss it all in a pot and cook till they're thick.
Not typically something you associate with veganism, but it's one of my favorite sides or entire meals, depending on how lazy I am.
(Non vegans, you can add bacon...cook it, then dice it up and add to the pot)

Eventually someday I want to go vegan. I have been eating less and less meat over the last several months and have been eating Boca and Morningstar burgers and some meatless chicken patty things. Well anyway, last night I cooked some brown rice in vegetable broth, added some onion and garlic powder, and a can of drained kidney beans. It was actually very yummy and satisfying. I looked at that Go Vegan cookbook listed above on Amazon and it looks pretty interesting. That's the thing for me, I don't know what to cook.

^ I suck at cooking and shopping and am someone who thinks boiling water for pasta is too difficult most days. So easy and simple is the way to go for me. That rice dish you made does sound good!

^ Mary, do you have a Trader Joe's near you? They have frozen plain pasta that I sometimes use for quick work meals. I just add veggies and some olive oil. Super easy.

Yup I have a TJ's by me. I LOVE it. Gotta stock up on there premade frozen meals. Also they really have the best vegan chicken nuggets ever.

I've been using Kashi 7 grain pilaf for by rice and beans. Chewy, nutty and way better than just rice. I usually use two beans, or peas and black beans and corn. Last time I made it with black beans and small white beans, then I added a spicy salsa to my portion. You could add some frozen mixed vegs, or green beans, or spinach, or just about any frozen veg and make it a really satisfying quickie meal.
I'm looking at rice cookers. Anyone use them?
Cat, I'm going to make that shepherd's pie. I'll have to figure out how to make a little gravy for it, maybe with mushrooms. Mashed potatoes are the BOMB!
Mary, you made me chuckle. My younger sister is so bad in the kitchen that once she made jello that didn't gel. ;D

Looked for gravy, found this. I'm gonna make it Saturday. Maybe not quick and easy, but the leftovers will be! I'll freeze daily portions.
Serves 8 (or 1 eight times!) Welcome spring--or vegetarian guests--to your table with this delicious main-course recipe that is destined to become a favorite for family and feasts alike. For killer veggie burgers, serve any leftover slices on toasted whole wheat buns with lettuce and spicy mustard.
Ingredients 1 tablespoon extra virgin olive oil, plus more for greasing 8 ounces button mushrooms, sliced Salt and ground black pepper to taste 1 (15-ounce) can no-salt-added garbanzo beans, rinsed and drained 3/4 cup rolled oats 2 cups cooked quinoa ( Learn to Cook: Quinoa) 1 cup frozen green peas 1/2 cup chopped fresh parsley and/or 1 tablespoon minced fresh thyme 10 sundried tomatoes packed in oil, drained and chopped 1 cup (about 1 onion) chopped red onion
Method Preheat oven to 350°F. Lightly grease an 8-inch loaf pan with oil; set aside. Heat oil in a large skillet over medium-high heat. Add mushrooms, salt and pepper and cook, stirring occasionally, until mushrooms are golden brown, 6 to 8 minutes.
Meanwhile, put beans, oats and 1/2 cup water into a food processor and pulse until almost smooth. In a large bowl, combine mushrooms, bean mixture, quinoa, peas, parsley, tomatoes, onion, salt and pepper. Transfer mixture to prepared loaf pan, gently pressing down and mounding it in the middle. Bake until firm and golden brown, 1 to 1 1/4 hours. Set aside to let rest for 10 minutes before slicing and serving.

TJ's has a cheap and delicious meatless ground "beef," too. I bet the shepherd's pie would be really good with mushroom gravy. That recipe looks delicious!
