This looks to be the topic I will be reading all the posts. Our 2 year old we just adopted 3 weeks ago has the kisses turning to nipping & grabbing the shirt sleeve when just playing a little to aggressive. Looks like the fix recipe.

I play rough with Lincoln but never using my hands. I only do it when we are playing with a ball which at that point is in his mouth. When he gets the ball away from me, I put my head down and he likes to side-step into it, back up and butt into my head again. With the ball in his mouth he has no mouthing going on and the few times we do without it, at least he is not associating hands with play-toys and I haven't had much an issue. Granted there is a bit going on, he is a puppy but he knows the boundaries and continues to become more disciplined with it.
There are lots of ways to play without using your hands. Be creative.

Matilda is really only getting mouthy when I get in bed to read. I get in bed and when I try to pull the covers over me, she starts getting mouthy on my forearm. Once the covers are over me, she stops and settles down and goes and lays on my feet.
The jumping on me thing, we are still working on
